“It’s all about the flavor,” says Executive Chef Frank Castleton and he certainly got that part right. It’s evident that thought and care was put into the crafting of each taco and the variety – including a Tofu & Grilled Farm Vegetable vegetarian option – ensures that everyone will find the one they will enjoy.
The Crispy Yellowtail Snapper taco is a popular choice for those who want to experience an island inspired creation. The crunchy panko bread crumb coating and warm heat from the chipotle pepper marry perfectly, creating a tropical retreat in every bite. For meat lovers, the Roasted Colorado Lamb Leg is a melt-in your mouth must try. Infused with flavor from three days of marinating in peppers and Mexican Barbacao spice is followed by slow roasting wrapped in banana leaves, making the taco succulent and delicious. A treat for chocolate fans is the Chocolate Mousse, which is served in a chocolate taco shell.
