Culinary adventurers, circle Wednesday, May 23, on your calendars. Grace Bay Club will be hosting a five-course “Asian and Champagne” dinner at 7:30 p.m. and you only get one shot at this unique duet with Guest Chef Victor Yu and Piper-Heidsieck Champagne.

Piper-Heidsieck is one of the oldest Champagne houses in France, with roots that date to 1785 and a modern portfolio headlined by its top-rated NV Brut. If Yu sounds familiar, perhaps you’ve visited London recently. He’s the principal at Yu Alderly Edge, considered one of the most innovative high-end Chinese restaurants in the city. Yu’s kitchen mines the Middle Kingdom’s ancient culinary traditions for new insights, blending old and new into acclaimed dining.

But it’s more likely you remember Yu because you attended the Caribbean Food and Wine Festival last November. Yu cooked the kick off dinner, and stuck the landing on an outrageously delicious five-course menu that set the festival abuzz. By the looks of it, he’s out to top himself on this return visit to Grace Bay Club.

After an Asian Negroni welcome cocktail, guests will begin the evening with five courses, each paired with a Piper-Heidsieck Champagne. We’re talking carpaccio of conch and tuna with sesame ponzu, followed by a chicken sweetcorn frothy soup with chicken dumplings, leading up to seared king prawn with ginger and spring onion. Then the main course: A pour of Piper-Heidsieck Rose Sauvage alongside Yu’s take on wok-seared Wagyu beef. Dessert is an intriguing sweet surprise.
